I love the categories. How would I go about creating them/assigning pages to them?

You just add to the end of the page, and it's assigned to that category. If it didn't exist, it's created. The first time you do this for a category, the category link on the bottom of the page will be red, so you should then click on it and type something in that page. That will be shown on the top of the category, as information text about it. Everything else in that page will be links to articles in the same category, i.e. sharing the same text.
After writing something on the category page, it can still take a while for the link to stop being a red "edit" link despite it being there. I don't know why it's like that, but after a while it use to fix itself.
A page can belong to many categories (just use many Category tags), but a guideline at least on Wikipedia is that only the "deepest" category should be used in case of subcategories. For example, if I have a Hellgate weapon somewhere, I don't add the Hellgate *item* category to that page too; that's already reachable from going to Hellgate weapon and then going up in the hierarchy. Oh, and to add subcats (I just recently learned this), simply add a category tag for the parent category on what's to be the subcategory page. See the source for Category:Hellgate Weaponry for example.
Finally, this I learned from KurganXXL, to link to categories (sometimes you may want this), you type this is a link. Note the leading : in that Wiki-link.
